Throughout (nearly all) history herbs have been collected and cultivated by every civilization. In medieval Europe herbs were essential to every household. Almost every task was related to the use of herbs. Herbs have long been used in cheese making, as tapers for candles as soap and in brewing wines and beers. They were also, of course, prized for their ability to heal and to render food more palatable. The ancient Egyptians and Chinese were renowned for their skill in the cultivation and use of herbs – the preparation of dyes and cosmetics being part of their knowledge.

In the last two centuries botanists have scoured the world collecting seeds and cuttings for study and preservation. The modern scientific exploration of the properties of medicinal plants has confirmed the validity of many ancient beliefs. The desirability of herbs in the preparation of delicious meals is long proven, and a revival of interest in growing herbs in gardens has made many useful plants readily available to the home gardener.

Starting your own herb garden need not be difficult or expensive. Small plants can easily be propagated from a single purchase to increase stock and many can be easily grown from seed.
